Sausage Chicken File Gumbo

Here is a recipe for a Gumbo. It is thick rich and smokey.

Assembled ingredients

Meats and Vegetables
1-1/2 lbs of smokes sausage cut into 1/4 inch thick slices
1-lb diced lean ham
2-lbs chicken ( I use white meat) cut into bite size chunks
1-1/2 cups of diced green pepper
1-1/2 cups of green onions diced (tops and all)
8 cloves of minced garlic
3 cups chopped onions
3-TBS of butter

Roux
1/2-cup of flour
4-6-oz of butter

Liquid and seasonings
4-qts of water
2-tsp salt (or to taste)
1-tsp black pepper
1-tsp dried thyme
3 or 4 whole bay leaves
2-TBS file' powder
2-TBS parsley
1/8-1/4 tsp cayenne pepper

3 chunks of peach (or your favorite wood) added to the coals for additional smoke flavor/profile

Brown the chicken in 3TBS of butter, remove and set aside

Add flour and 4-6 oz of butter to pan and brown flour until it reaches a nice chocolate brown

Add all the vegetables to the roux, cover pan, saute until just tender.

Add 2 quarts of water, meats and all the spices/seasonings except the file powder

Bring to boil add remaining water.
Continue to simmer uncovered for 3 hours

After 3 hours add the file powder and continue to cook for an additional 30 minutes. Add more water if necessary.

Serve over rice in a bowl with lots of bread and beverage of choice.

Wow! That looks good I love gumbo and have yet to make it on the grill. This is giving me the motivation to give it a shot!
