FANTASTIC pasta dish...light but with a smokey richness!
1 quart smoked grape tomatoes (SEE Smoked Olives and Grape Tomatoes recipe under "smoked" section for info on smoking the tomatoes!)
1 cup chicken (or vegetable stock)
2 medium balls of fresh mozzarella, cubed
Salt & Pepper to taste
Fresh basil, cut into thin strips (chiffonade)
1/2 pound pasta, cooked (fettuccine, or other pasta)
Parmesan cheese to garnish
Place tomatoes and stock in a sauce pan, bring to a simmer and heat tomatoes thoroughly. Stir in mozzarella cheese until softened, season with salt and pepper. Stir in fresh basil and cooked pasta. Serve with grated Parmesan cheese
Serves 4 as a light dinner or hearty side dish (yummy with grilled chicken!!).
